I was born and raised in Nashville, TN. From as early as I can remember food has been about much more than fulfilling basic needs, growing up the hallmark of any holiday was the family gathering to enjoy a meal and conversation. A number of my life experiences have contributed to the creation of Caribreoso and realizing this dream. Many of my family members (brother, grandmother, cousin, uncle, nephew, etc.) are and were in the food/beverage industry. So you might say that Òcooking is in my bloodÓ. Beginning with selling fish sandwiches and barbecue for a local business as a child to attending culinary school in 2008, food has always been a passion and the kitchen a source of artistic expression.

Great food crosses racial, social and economic boundaries. I developed an affinity for Caribbean and Creole food during my years in Florida and travels to the Bahamas, Jamaica, New Orleans and Houston. IÕve been fortunate enough to eat and fellowship with a myriad of people over the years. These experiences have afforded me the opportunity to learn about different types of food preparation and understand how the experience of eating shape dishes native to various cultures. I continued this culinary exploration in 2008 when I attended The Kitchen Academy (now Le Cordon Bleu). It was here that I realized the depth of culinary techniques rolled into Caribbean, Creole and Southern cuisine.

Aside from my passion for culinary exploration, music is very important to me. The poetic words and instruments melding together harmoniously are all sources of inspiration. When I prepare a meal or cater an event I strive to create a harmony between the food, beverages and other components of the event.

I understand firsthand the dual pressures we face to excel professionally and succeed in our personal life. Balancing 50+ hour work weeks, transporting kids to and from activities, remaining engaged in all day meetings, deciding on and preparing a healthy and balanced meal, attending after hour professional events and spending quality time with family/friends are all items that anyone juggles daily. Allow me to take some of the pressure off of you by managing your familyÕs dinner preparation. As my client weÕll partner together to ensure you have enjoyable and freshly prepared meals daily that meet your dietary needs. I look forward to being your personal culinary professional and joining your team to ensure you have the personal and professional success you desire.

Like most professional chefs, Chef Jay’s kitchen experience began early at home. Licking chocolate batter from his mother’s wooden spoon as a child and manning the barbecue during family dinners as a teen in upstate New York produced the sparks that ignited his culinary career. His formal culinary training however began at Harriet Bullitt’s renowned Sleeping Lady Mountain Retreat in Leavenworth, Washington. There he was apprenticed to the reputable Chef Damian Browne. His two years with Chef Damian honed his skills in classical French cooking to a fine edge.

Jay’s specialty is in home, multi course dinners. Paired with a wine flight, it is as if you are at the Chef’s table in the comfort of your own home; a truly wonderful experience for you and your guests.

Chef Jay is a graduate of the Culinary Business Academy & a member of the USPCA (United States Personal Chef Association) which allows him to apply the highest standards to his business practices as well as to his food. His commitment to fresh seasonal ingredients and impeccable personal service are unquestioned. His knowledge is vast and in his desire to best serve his clients Chef Jay continues to pursue continuing education & experience.

Rachel Duboff had the good fortune to be raised in Seattle by a stay-at-home mom who loved to cook and try out new recipes. On graduation from the University of Washington with a degree in Business Administration, Rachel moved to Malaysia where she was exposed to the world of SE Asian and Indian cooking, learning from her co-workers and their families. On her return to North America, Rachel headed to Vancouver, BC, where she worked in a cooking school and began experimenting on her own with private catering.

Rachel’s focus on special needs diets started with guiding friends and family through their struggles with new-found vegetarianism/veganism, high cholesterol, diabetes, gluten intolerance, cancer treatment. Realizing that they often lacked the culinary skills to be able to master these challenges on their own, Rachel became an invaluable advisor, providing recipes, guidance and cooking on their behalf. Rachel decided to formalize her education and attended the Culinary Arts program at the Art Institute of Seattle in 2001/2002; in 2009/2010 Rachel continued her commitment by becoming a Nutritional Therapist. Rachel has been an active volunteer chef instructor with Cooking Matters (formerly Operation Frontline) since 2003, teaching food and nutrition to at-risk communities throughout Seattle. Rachel is also a regular instructor for PCC Natural Markets and the Pacific Culinary Studios where she teaches to regular sold out classes.

Rachel started {thyme to Nourish} because she believes that whole foods and healthy eating is the source of health and happiness. She is dedicated to helping her clients embrace food no matter what challenges or goals they may have. Rachel and {thyme to Nourish} focus on providing good food to good people.

Cooking has been a passion of mine from a very young age. Growing up I was one of the few children who preferred watching “The Galloping Gourmet” and “In the Kitchen with Julia Child” to Sesame Street. As a result, by the time I was in grade school, I was my grandmother’s favorite "sous chef," and by junior high was planning and preparing the menus for my family’s holiday and cocktail parties. My love of cooking has continued to grow over the years, and for me, there’s no greater satisfaction than preparing delicious meals for friends and family.

Having worked for 20 years, I also know firsthand the time demands on today’s busy professional. Add to that family and social responsibilities, and it’s not surprising that many of today’s families rely on pre-packaged, grocery store meals or restaurant take-out. It’s a wonder we have time to eat at all, let alone eat well!

In 2009 I came to a crossroad in my life and decided to put my passion to work for me. I became a personal chef and have not looked back. I have always had a passion for being in the kitchen creating different dishes from a broad variety of traditional and ethnic flavors. I am very passionate about making delicious, but nutritionally balanced and healthy meals as well as creating original recipes for my family and friends. I am a member of the Personal Chef’s Network and am fully insured, licensed, and certified in the highest level of food safety.

I believe that some of the best food on earth is found right here in the Northwest. I also believe in celebrating that bounty, so I source the food for my clients the smart way: I buy from local producers who use sustainable practices, shop at the local farmers’ markets and work with my clients’ Community Supported Agriculture (CSA) subscriptions. I also support artisanal food crafters from around the world; my passion lies in blending Northwestern flavors with international cuisine.

After graduating from Seattle Central Culinary Academy thirteen years ago, Lesa has worked as a professional cook in several popular Seattle restaurants including Kaspar’s, Jitterbug, The Rose Club and Dinette. For four years she acted as the specialty foods director for the Wild Salmon Seafood Market. When she’s not cooking up a storm for her clients, you can find her teaching cooking classes at PCC Natural Markets, Pacific Culinary Studio, ChefShop.com and FareStart’s Adult Training Program.

Lesa donates her time as a volunteer chef and instructor for a number of local non-profit organizations including Operation Frontline and Slow Food Seattle. She’s a member of the International Association of Culinary Professionals, Women Chefs and Restaurateurs Association, Seattle Tilth, Chef’s Collaborative and Sustainable Seattle.
